Picpoul

When it comes to hard cheeses, you need a white that is rich and dry, with some good acidity. This cheese will come through with the mineral notes in this wine, whilst the acidity will help break down the structure.


Saint-Chinian

A medium bodied red is needed here as the weight and tannins will work well with the structure of this hard cheese. The very subtle spice and pepper notes will work well with the flavour of this cheese without overpowering it.
