A Bloody Mary is a good recommendation for guests here, the strong bold spicy flavours match well with the Toulouse sausages and spicy tomato sauce.

This cold, refreshing and subtle sweet juice, will help counteract the smoky flavours in the dish as well as the spice.
SIDES
This breakfast is quite filling, however for guests who are still peckish why not suggest a warm pastry for afterwards (breakfast dessert). Or some extra bread for that sauce.
This dish is inspired by a Shakshuka (which is a dish of eggs poached in a sauce of tomatoes). We’ve given ours a French twist by making it a cassoulet, which is a rich stew originating in southern France. The hero ingredient here is the smoked Toulouse sausages, which is an essential ingredient in any French cassoulet.
