About the dish

This dish features a tender grilled chicken breast paired with a Caesar-inspired salad of baby gem lettuce, red endive, parmesan, and cherry tomatoes. Crispy capers and golden Panisse croûtes add crunch, while a poached egg brings a creamy richness. It's finished with micro greens and a sprinkle of Maldon salt and pepper.

½ each Baby gem lettuce (cut into 3 wedges)

40g Caesar dressing DK

10g Grated parmesan

2 each Cherry tomato (cut in quarters)

5g Crispy capers

5 pieces Panisse croûtes (40g total)

The buttery chicken in this dish is crying out for a buttery white like our Drouhin Côtes de Beaune, however, the St Veran would also work well.
