A frozen parfait filled with mixed fruit, almonds, and brandy on a bed of gingerbread crumb, topped with frosted red currants and chiffonade mint.

3g Gingerbread Crumb DK 

2g Salted Caramel Sauce DK 

3g Sweetened Coconut 

1 dusting Icing Sugar 

1 leaf Mint Chiffonade 

1 branch Redcurrants (approx. 5-6 currants)

DRINKS

The perfect pairing with this dish is a brandy in a warm glass! Armagnac would be ideal, but Cognac will also work well. For something lighter, try a sweet white Muscat.

The French call it nougat glacé; sweetened with honey, it is very similar to an Italian semifreddo. While nougat glacé is French, nougat actually has its origins in the Middle East, originally called natif.
