This dish is quite decadent for a vegetarian main course, with buttery pastry, creamy goats cheese, and sweet caramel requiring a refreshing white to balance. A loire white such as Pouilly-Fumé is classic with goat's cheese, however Côtes du Provence rosé would also be excellent with it's citrus and herbal flavours. A Pentire Spritz would be super refreshing with this, supplying appropriate green herbal notes (similar to Loire Sauvignon Blanc).

Crispy Comté Sprouts – The slight bitterness of the sprouts contrasts with the sweetness of the tarte, creating balance.
Truffled Cauliflower au Gratin – The indulgent truffle sauce complements the caramelised flavours of the tarte, adding richness.
As the legend goes, this dish was made by accident by one of the Tatin sisters who made the tarte upside down by accident but continue to serve it to guests who in turn, loved it. It’s usually made with apples that are caramelised in butter & sugar before being added to the pastry and baked in the oven.
