About the dish

Creamy salmon rillettes layered on honey & mustard pickled beetroot. Topped with whipped horseradish cream, dill, and lemon, and served with seeded sourdough.

65g Smoked Salmon Rillette mix DK

Recommendations

DRINKS

This dish is rich and creamy, requiring a wine with both body and acidity to balance it. A creamy Chardonnay like our St-Véran would be perfect, but Champagne would also be superb. For non-drinkers, the Oddbird Rosé will pair well.

Rillettes is a method similar to confit, where meat is seasoned, submerged in fat, and cooked slowly over several hours. The fish or meat is then shredded, placed in containers, and covered with fat.
