About the dish
Whitebaits are typically deep-fried and very easy to prepare, we toss ours in milk & flour before deep-frying. It’s a great finger food, served alongside lemon wedge and Provençal mayo.

DRINKS
Côtes De Gascogne IGP Longue Roche, Sauvignon Blanc
This wine works really well as a match here. Not only does it go well with fish but the acidity helps cut through the oil in the dish.
Lucky Saint
Provides a crisp and refreshing accompaniment to fried whitebait, enhancing its flavours without overwhelming them.
SIDES
Some olives would be a great little addition to this starter, since seafood and olives go very well together.
Whitebait is a very small fish, usually herring, which is cooked and eaten whole including head, fins and bones.
