About the dish

Whitebaits are typically deep-fried and very easy to prepare, we toss ours in milk & flour before deep-frying. It’s a great finger food, served alongside lemon wedge and Provençal mayo.

10ml Milk

10g Cornflour

1 pinch salt

1 each Lemon wedge

30g Provencal Mayo

This wine works really well as a match here. Not only does it go well with fish but the acidity helps cut through the oil in the dish.

Some olives would be a great little addition to this starter, since seafood and olives go very well together.
