A vibrant assortment of tomatoes, featuring ripe tomatoes cut into wedges and cherry tomatoes quartered for added sweetness. Enhanced with tangy pickled shallots and a drizzle of cabernet sauvignon vinegar and olive oil for a burst of flavour. Adorned with chiffonade basil leaves and seasoned with a pinch of Maldon salt and pepper.
Ingredients
1 Tomatoes – Cut into 6 wedges
3 each Cherry tomatoes – cut into quarters
15g Pickled Shallots
5ml Cabernet sauvignon vinegar
5ml Olive oil
2 each Basil leaves - chiffonade
pinch of Maldon salt & pepper
