About the dish

A creamy chicken liver parfait that’s incredibly rich and bursting with flavour. On top, there’s a delicious thyme and pink peppercorn butter. It is served with freshly baked croûtes, fig chutney, pickled rainbow carrots and pickled cucumber.

Côtes de Provence

Both are from the same region! The garlic and parsley notes of the Fougasse are a perfect match for the refreshing and herbal notes of the Côtes de Provence. A match made in heaven.

Fougasse (pronounced foo-gaas) is a flatbread from Provence in the south of France however, its origin goes back to ancient Rome. Fougasse is traditionally cut to resemble a leaf or sheath of wheat, with open areas within the bread.
