About the dish
A creamy chicken liver parfait that’s incredibly rich and bursting with flavour. On top, there’s a delicious thyme and pink peppercorn butter. It is served with freshly baked croûtes, fig chutney, pickled rainbow carrots and pickled cucumber.

Fougasse (pronounced foo-gaas) is a flatbread from Provence in the south of France however, its origin goes back to ancient Rome. Fougasse is traditionally cut to resemble a leaf or sheath of wheat, with open areas within the bread.
